2 whole wheat tortillas
2 eggs
50 grams shredded mozzarella cheese
50 grams shredded cheddar cheese
1 cup fresh spinach
1 teaspoon olive oil
Method :
1.Heat olive oil in a large pan over medium heat.
2.Add spinach to the pan and stir until wilted.
3.In a separate bowl, beat the eggs.
4.Place the eggs on the spinach and let them until they firm up a little.
5.Place one tortilla in the pan, Then add half of the mozzarella and cheddar cheese on the tortilla.
6.Pour the egg and spinach mixture over the cheese.
7.Place the second tortilla on top and wait until the cheese melts and the tortilla becomes crispy.
8.Flip the quesadilla and cook until the other side is toasted.
9.Cut the quesadilla into triangles and serve.
