2 cans (about 300 g) water tuna
1 red pepper, cut into small cubes
1 cucumber, diced
1/4 cup chopped red onion
1/4 cup chopped parsley
1/4 cup corn (optional)
2 tbsp olive oil
2 tbsp freshly squeezed lemon juice
1 tsp Dijon mustard
Method :
1.In a large bowl, combine the drained tuna, red pepper, cucumber, red onion, parsley, and corn (if using).
2.In a small bowl, mix olive oil, lemon juice, mustard, salt, and black pepper.
3.Pour the marinade over the tuna and vegetable mixture and mix well.
4.Serve the salad cold and enjoy.
