Method :1.In a large bowl, mix lemon juice, lemon zest, crushed garlic, dried thyme, salt, black pepper, and olive oil (and if using, add mustard).
2.Add the tofu cubes to the marinade and mix well to completely cover the tofu. Let the tofu soak for at least 30 minutes in the refrigerator.
3.Add the marinated tofu to the pan and cook for 7-10 minutes, turning the cubes until browned on all sides.
4.In the same pan, add a little olive oil if necessary and add vegetables ( zucchini, broccoli) and cook until tender and slightly crispy, about 5-7 minutes.
5.Return the tofu to the pan with the vegetables and mix thoroughly.
6.Serve tofu and vegetables sprinkled with chopped parsley for garnish.
