1 cup boiled and mashed fava beans (Foul Mudammas)
1 tablespoon olive oil
1 medium-sized finely chopped onion
2 cloves of minced garlic
1 large finely chopped tomato
1/2 teaspoon cumin
1/2 teaspoon crushed red pepper (optional)
Salt and black pepper to taste
Juice of one lemon
Fresh vegetables for garnish (cucumber, tomatoes, radishes, parsley)
Method :
1.In a pan over heat, warm the olive oil.
2.Add the onion and stir until translucent.
3.Add the garlic and continue sautéing for two minutes.
4.Add the tomatoes and stir until they become tender.
5.Add the boiled and mashed fava beans to the pan.
6.Add cumin and crushed red pepper, stir the ingredients well.
7.Sweeten the mixture with lemon juice and season with salt and black pepper according to taste.
8.Serve the Foul Mudammas in a serving dish and garnish with fresh vegetables.
